Russell learned from one of the old-school greats – Roland Lindsey of Bodacious Bar-B-Q in northeast Texas – and continues inventing and improving to this day. Misty’s side dishes are legendary, from the bright and fresh Texas caviar to the boozy bourbon banana pudding. Roegels Barbecue was also one of the first joints in Houston to start making in-house pastrami.
More recently they’ve begun working with North Carolina-style whole hog barbecue, acquiring a dedicated pit to cook the hog and transform it into excellent pulled pork.
