Former U. of Houston football star Kevin Mason perfected the art of sausage-making in his kitchen while working as a sheriff deputy; after retiring, he went full time in the barbecue business in 2019.

In a nondescript strip center south of the 1960 area, between a daycare center and a tire shop, this tiny space pushes out big flavors, including some of the best Polish/Czech kielbasa-style pork-and-beef sausage you will find, along with SETX-style boudin, and a throwback Beaumont-style beef juicy link.

The rest of the trinity – brisket and ribs – are also worthy, and on Fridays he serves some of the best fried catfish and shrimp at any Houston barbecue joint. Rib tips are a special on Thursdays. There’s a small dining room inside and a big picnic table outside, but there’s plenty of take-away orders flowing through so feel free to get it to-go at Lonestar Sausage & BBQ.




Building: Located in a tiny slot of a small strip shopping center; there are 3 tables in the small dinign room and two picnic tables on the covered area just outside the door.
Parking: There's a large parking lot attached to the strip center - there's almost always a parking space available.
Ordering: Counter-service - place your order at the point-of-sale (there's a video menu on the wall behind) then wait for your name to be called.
Catering: Pickup only. There is a separate catering menu on the website.

Known for: House-made Beaumont-style beef juicy links literally explode with molten fat when you cut into them (as they should); pork-and-beef sausage is some of the best in Houston.
Pro-tip: Visit on a Friday and get a filet (or two) of the excellent fried catfish to go with the sausage.
