After a training stint at Louie Mueller Barbecue, Jackson spent a few years as a local gun-for-hire pitmaster before returning to his hometown of Katy and canvassing the area for a place to set up his own shop. He found the perfect (tradition-wise) spot in a tiny strip center on a wide stretch of South Mason Road formerly occupied by a legendary (and infamous) local joint called Nonmacher’s.
With only a few tables, Brett’s is a classic hole-in-the-wall barbecue joint with one massive advantage – a literally massive, forty year-old steel barrel pit called The Beast that is seemingly held together with only a few questionable welds. One thing’s for sure: Jackson has mastered The Beast and serves some of the best Central Texas-style barbecue in Houston that his one-time boss in Taylor would be proud of.
